Perched above the agave fields, our maestro mezcalero’s palenque sits nestled in the rugged Oaxacan landscape. Here, three generations of traditional knowledge come alive through his hands. Not just a craftsman, but a steward of mezcal’s heritage, he serves on the Board of Comercam, the prestigious organization safeguarding Mezcal’s Designation of Origin.

Years of searching led us to this sacred spot, where smoke rises from earthen ovens and the ancient tahona wheel still turns, crushing roasted agave just as his grandfather did. In this place, tradition isn’t just preserved—it’s perfected in every batch.

Crafting Our Mezcal: Step-by-Step

Harvesting the Agave

Our journey begins in the sun-drenched fields of Oaxaca, where we hand-select the finest espadin agave, ensuring only the best plants are chosen for our mezcal.

Roasting the Hearts

The agave hearts, or piñas, are roasted in traditional earthen pits, infusing them with a rich, smoky flavor that defines our mezcal’s unique character.

The Mill: Ancient Tahona

After roasting, workers transfer the agave to a stone tahona. It’s crushed, the juices are extracted and a grinding wheel turns the mix to mash.

Fermentation Process

The mash goes in pine vats filled with water to ferment naturally. Fermentation can take anywhere from one to four weeks. The mezcal maker’s senses are the only tools used unlocking complex flavors that can only come from time-honored tradition.

Distillation Mastery

In small batches, our maestro mezcalero works his generational craft, carefully distilling the fermented agave twice in copper stills. This crucial step captures both the subtle smokiness and refined character that makes Mana Tibo perfect for both mezcal enthusiasts and those beginning their mezcal journey.
